I came across Book of Yum’s blog late one night in an
attempt to abate the boredom of insomnia.
Once a month, readers and bloggers can adopt another gluten-free blogger
by choosing one of their recipes to make.
I thought this sounded like a great idea, so I eagerly signed up. Afterwards, I looked at the submission dates
only to realise I only had one baking day to get everything in order. But I am glad to say I made it.
I adopted Gluten-Free Girl and the Chef making her ChocolateBanana Bread with Teff Flour. I was concerned I wouldn’t be able to follow
the recipe since that’s not something I typically do, but with the exception of
not being able to find ripe bananas in any of three different stores, I was
able to restrain myself and take orders.
And I’m glad I did. This was a
delicious, well-balanced recipe with warming tones. I will make this again and I wouldn’t change
a thing.
I haven't used teff often but did like it's texture. This sounds good.
